Priya's Vegetable Kosu -Chettinadu Style Sidedish

Hi Friends ,
This is my take on the famous Chettinadu Vengaya kosu ......
My inspiration to try this was from watching Chef Jacob cooking it....
My online search took me to Solai's kitchen blog ....
My recipe is modified from both their preparations........
Ingredients
Big onion -1
Medium Tomato - 2
Mushroom-4
Big Potato-1
Cauliflower-handful
Carrot-1
Salt-to taste
Oil-1tbsp
Grind to a paste
Coconut -just over 1/4 of a coconut
Saunf-1/4 tsp
Poppy seeds-1/2 tsp
Redchillies-4
Roasted channadhal- 1 tbsp(pottukadalai)
Seasoning
Jeera-1/4 tsp
Saunf-1/4tsp
Cloves-2
Cinnamon-small piece
For Garnishing
Chopped coriander-1 tbsp
Preparation-15 mins
Chop the onions and Tomatoes finely ...
Chop the potatoes,mushroom, cauliflower and carrots to small pieces...
Grind the coconut , chillies, saunf, poppy seeds to a fine paste.....
Method
Heat the Pressure cooker
Add oil
Add the seasoning ingredients listed above ...
Add onions ..saute for a min and add salt ....
Add mushroom -saute and cook for two mins ...
Add the potatoes ,saute and add the cauliflower and carrots too ....
Saute the veg for a min and let it cook for a further 5 mins ...
Add the tomatoes, turmeric powder and cook for two mins...
Add the ground paste and mix well.....
Add 2 cups of water ...can add 1/2 a cup more if too thick....
Mix well and pressure cook for two whistles....
Garnish with Coriander leaves........
Serve with idly,dosai, chappati or Bread .........

Note-4 red chillies gives a mild gravy suitable for children..... If you want a hotter gravy add couple more chillies........
